Each associate cooperative is composed of numerous olive growers, who own the olive groves, and at least one mill or processing plant, where olives are cured or virgin olive oils are extracted. However, in the Dcoop Laboratories quality controls are continuously carried out throughout the entire elaboration process. Samples of all olives that reach our facilities are taken and analysed every day. Recently, our laboratories have been recognized by the National Accreditation Entity (ENAC), another step further in our excellent work.

Dcoop has its own tasting panel (in Spain there are only 10), which meet the requirements established by the International Olive Council. In this laboratory all virgin olive oils are analysed according to the Commission Regulation CE640/2008 of 4 July 2008 amending Regulation (EEC) No 2568/91 on the characteristics of olive oil and olive-residue oil and on the relevant methods of analysis.

Only a strict quality control may guarantee a good product, always in the best conditions. For that reason, the Table Olives Section of Dcoop has always provided the best quality controls for its olives through an exclusive processing method.

This process is the result of a long tradition in olive curing since more than one century. Today it is a fully automated process, accompanied by a strict analysis in our test laboratories. Our researchers carry out a very close, computerised monitoring of olives throughout the whole process, from harvesting to distribution in their best conditions.

Only those olives that meet all the quality controls will be marketed. The whole process is registered and recorded. Dcoop packages green and black olives, that reach the consumer under different presentations: whole, pitted, sliced, stuffed with pepper paste…

To do it, prior to packaging, the olives are subject of different processes. In a first step, they are classified by size. Secondly, those with similar size (normally the highest ones) are sent to a different work line where they are pitted, stuffed or sliced depending on the final style they will be marketed under.

Dcoop Laboratories have a highly qualified personal team and the latest technology, as the Group regularly invests in research and development.
